Garlic Shrimp

This is a very simple sauteed Garlic Shrimp recipe that I put together the other night to go along with the Caprese Lasagna Rollups I was baking.

Ingredients:

  • 1lb medium frozen shell-on easy peel shrimp
  • 2 tbsp olive oil
  • 6 cloves garlic – diced
  • 1 bunch scallions – chopped

Thaw the shrimp in a bowl of cold water, takes about 30 minutes, and peel. Heat the 2 tablespoons of olive oil in a medium skillet over medium-high heat. Add the diced garlic and heat until lightly browned. Add the thawed, peeled shrimp and cook until pink, stirring occasionally. Add the chopped scallions and cook for about 4 minutes, stirring occasionally.

Garlic Shrimp, Grilled Asparagus & Caprese Lasagna Rollups

Your Garlic Shrimp is now done and ready to serve. I chose to serve this with my Grilled Asparagus and Caprese Lasagna Rollups the other night. It’s a great dish to pair with other dinner items, or you can serve over rice, pasta or salad and it makes for an easy stand-alone dish as well.
